Rack of lamb is the king of all lamb cuts and you’re sure to impress when it’s on the menu. Even more so when served with a fresh, healthy, and cannabis infused minted pea pesto.
Mint and lamb go hand in hand, and with this recipe you’ll get a kick of mint with the fresh taste of peas. Peas fresh from the pod will taste the best but frozen peas are also a delicious alternative if you can’t find fresh ones.
In addition to the minted pea pesto the lamb is also covered with a delicious and simple parsley and garlic marinade to add extra flavor to the rack of lamb.
The parsley and garlic marinade can also be infused with cannabis oil as long as you add it onto the lamb in the final stages of cooking, or the cannabinoids will burn off from your oil.
For Minted Pesto
- 1 cup shelled peas
- 90 ml mint leaves, packed
- 90 ml olive oil (with your dosage of cannabis oil)
- 2 tbsp Lemon Juice
- Sea salt, to taste
- 90 ml water
